Banana oat flapjack

Good to use up soft bananas.

Ingredients
- 110g porridge oats
- 110g caster sugar
- 1 dessertspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon bicarbonate of soda
- 100g sultanas
- 225g mashed bananas
- 4 tablespoons skimmed milk
- 2 egg whites
- 1 teaspoon vanilla extract

Preheat oven to 180°C

Mix together dry ingredients. In a separate bowl mix together bananas, egg whites, milk and vanilla. Combine and beat all together.

Bake in a 23×33cm (9×13 in) pan, which has been lightly greased or lined with baking parchment, for about 35 minutes. Cool and cut into bars. You may sprinkle with cinnamon and sugar, if desired.
