Taco Soup

Ingredients

  • 1lb cooked chicken (save broth for later use)
  • 1 onion, chopped
  • 1 clove garlic, chopped
  • 1 tsp olive oil
  • 1 can stewed tomatoes, diced
  • 1 can rotel
  • 1 can pinto beans (do not drain)
  • 1 can black beans (do not drain)
  • 4 oz canned chilies, optional
  • 1 1/2 pkg taco seasoning
  • 1 cup reserved chicken broth, may need more
  • Topping:
  • shredded cheese
  • sour cream

Directions

  1. Combine all ingredients in pot and cook for 30-60 min. Serve over Tortilla chips and top grated cheese and sour cream.
