Hjónabandssæla

Traditional Icelandic cake. Jam is usually rhubarb but could use any. The name means “Wedded bliss”.

Serves 8 people

Ingredients
- 200 g butter
- 170 g oatmeal
- 170 g flour
- 100 g sugar
- 1 tsp baking soda
- 1/2 jar rhubarb jam
Directions

Rub butter into the dry ingrediants.

Press about 2/3 of the mixture into the bottom of a round cake tin.

Spread with the jam.

Sprinkle rest of mixture over.

Bake at 200°C until jam begins to bubble through the topping.
