Ecuadorian Arroz Relleno

- 2 c uncooked rice
- 1 onion
- 1 green/red pepper, diced
- salt
- comino (don't know what this is in English)
- 3 hard-boiled eggs, sliced
- 4-6 hot dogs, sliced
- 1 c peas
- 2 carrots, cooked and diced
Directions

Cook rice, eggs, peas, and carrots.

Boil hot dogs, then slice and fry with a little oil.

Saute onion, adding pepper sauce half way through.

Combine all ingredients except eggs in a large baking pan. Place egg slices on top of rice mixture and cook for 30 minutes.
