Bruschetta with white beans, tomatoes and olives

Ingredients

  • 1 1/2 cups white beans (canned or soaked)
  • 3 plum tomatoes, seeded, chopped
  • 1/4 cup chopped pitted Kalamata olives
  • 6 tablespoons olive oil
  • 1/4 cup chopped fresh basil
  • 1 tablespoon minced garlic
  • 5-6 ounces soft fresh goat cheese
  • 1 french baguette

Directions

  1. Mix beans, tomatoes, olives, 4 tbsp oil, basil, and garlic. Season to taste with salt and pepper.

  2. Brush bread with oil and broil. Spread with cheese and top with bean mixture.
