Apple Clafouti

Ingredients
- 2 large apples, peeled, cored, and cut into 1-inch pieces (suggested Gala or Pink Lady)
- 2 tablespoons unsalted butter, softened and cut into small pieces
- 4 tablespoons sugar, plus
- 3/4 cup sugar
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- salt (a pinch)
- 1/2 teaspoon ground cinnamon
- 4 large eggs
- 1 3/4 cups half-and-half
- 2 teaspoons vanilla extract
- powdered sugar, for dusting
Directions

Preheat oven to 425°; generously coat a 13 × 9 inch baking dish with butter.

Place on a baking sheet.

Sprinkle apples on the bottom of the dish and then mix with the butter and 2 tablespoons sugar until nicely coated.

Bake for 20 minutes, stirring occasionally so that the apples cook evenly; remove from the oven.

Meanwhile, combine the flour, baking powder, salt, and cinnamon on a large sheet of waxed paper.

In a large bowl or in a blender, beat the eggs with the 3/4 cup sugar for 1 minute, or until blended.

Beat in the dry ingredients alternately with the half and half.

Add in the vanilla and mix to combine.

Pour the batter evenly over the apples; sprinkle with the remaining 2 tablespoons sugar.

Bake for about 30 minutes, or until puffed and golden brown.

Sprinkle with powdered sugar.

Serve immediately.
