Apple Clafouti

Ingredients

  • 2 large apples, peeled, cored, and cut into 1-inch pieces (suggested Gala or Pink Lady)
  • 2 tablespoons unsalted butter, softened and cut into small pieces
  • 4 tablespoons sugar, plus
  • 3/4 cup sugar
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • salt (a pinch)
  • 1/2 teaspoon ground cinnamon
  • 4 large eggs
  • 1 3/4 cups half-and-half
  • 2 teaspoons vanilla extract
  • powdered sugar, for dusting

Directions

  1. Preheat oven to 425°; generously coat a 13 × 9 inch baking dish with butter.

  2. Place on a baking sheet.

  3. Sprinkle apples on the bottom of the dish and then mix with the butter and 2 tablespoons sugar until nicely coated.

  4. Bake for 20 minutes, stirring occasionally so that the apples cook evenly; remove from the oven.

  5. Meanwhile, combine the flour, baking powder, salt, and cinnamon on a large sheet of waxed paper.

  6. In a large bowl or in a blender, beat the eggs with the 3/4 cup sugar for 1 minute, or until blended.

  7. Beat in the dry ingredients alternately with the half and half.

  8. Add in the vanilla and mix to combine.

  9. Pour the batter evenly over the apples; sprinkle with the remaining 2 tablespoons sugar.

  10. Bake for about 30 minutes, or until puffed and golden brown.

  11. Sprinkle with powdered sugar.

  12. Serve immediately.
