Ingredients
- 1 cup chopped onion
- Olive oil
- 2 cups white beans (soak in water overnight - drain and rinse)
- 8 cups water
- 2 cloves of garlic pressed
- 1 cup chopped celery
- 2 carrots, chopped
- 2 Tablespoons parsley
- Salt and pepper
- 1 Tablespoon flour
- 15 oz. tomato sauce
Directions

In a large pot, saute onion and garlic in the oil for about 5 minutes.

Add 8 cups of water and bring to a boil (Keep adding water as necessary)

Add beans and cook for 2 hours, stirring occasionally

Add celery, carrots and parsley and cook for another 1/2 hour.

Add salt, pepper and tomato sauce

Mix flour and water and add to soup
