Baby Bok Choy With Cashews

Serves 4 people

Ingredients

  • Ingredients (use vegan versions):
  • 1 pound baby bok choy, trimmed and washed
  • 1 tablespoon minced garlic
  • 1 cup chopped green onions
  • 2 tablespoons olive oil
  • 1 teaspoon sesame oil
  • 1/2 cup chopped cashews
  • salt to taste

Directions

  1. Heat olive oil on a medium-hot stove (in saute pan), add onions, garlics, bok choy.

  2. Sprinkle with sesame oil and salt.

  3. Stir, so that the bok choy is reasonably coated by the oils.

  4. Cover the pan and let the bok choy cook until slightly wilted (about 3 1/2 minutes).

  5. Remove cover and reduce heat to low. Stir and let cook one more minute.

  6. Stir in cashews, serve, enjoy!
