Moroccan Carrots

Ingredients

  • Ingredients (use vegan versions):
  • 2 cups sliced carrots, about 1/4 thick
  • 4 teaspoons of olive oil
  • 1 teaspoon sweet paprika
  • 1 teaspoon cumin
  • 1/4 teaspoon coriander

  2. Bring carrots to boil. After 5 minutes, remove from heat and drain. Add remaining ingredients and stir about. Experiment with other flavorings, such as garlic, turmeric, oregano, and other spices and herbs. Easy to make and there is almost an endless number of combinations that are quite satisfying.
