Asparagus With Lemon Butter

Ingredients

  • 1/2 cup water
  • 18 medium asparagus spears, bottoms snapped
  • 1 tablespoon butter or 1 tablespoon margarine
  • 1 tablespoon fresh lemon juice
  • coarse salt, to taste

Directions

  1. In a big skillet, bring the water to a boil; add the asparagus; cook, covered, about 4 minute or to desired doneness; drain.

  2. Return asparagus to skillet; add the butter; cook over medium heat, tossing until the butter melts; add the lemon juice and salt; toss.

  3. *May substitute 1/2 lb green beans (3 cups) for the asparagus
