Pilaf Tabbouleh

Ingredients

  • 2 1/4 c cooked and cooled kashi 7 whole grain pilaf
  • 3 scallions, thinly sliced
  • 3/4 c diced cucumber
  • 3/4 c chopped flat leaf parsley
  • 2 to 3 tbl lemon juice (and/or lime juice)
  • 1 c diced tomato
  • 1 tbl evoo

Directions

  1. Combine all ingredients.

  2. Season with salt and freshly ground pepper.

  3. Serve at room temperature or chilled.
