Ingredients
- 2 1/4 c cooked and cooled kashi 7 whole grain pilaf
- 3 scallions, thinly sliced
- 3/4 c diced cucumber
- 3/4 c chopped flat leaf parsley
- 2 to 3 tbl lemon juice (and/or lime juice)
- 1 c diced tomato
- 1 tbl evoo
Directions

Combine all ingredients.

Season with salt and freshly ground pepper.

Serve at room temperature or chilled.
