Ho-bak Jeon (Egg dipped zucchini)

Lightly fried egg dipped zucchini to be eaten with rice and other Korean food

Ingredients
- 1 medium sized zucchini
- 2 eggs
- 1/2 cup white flour
- 1 tsp salt
- 1/2 cup canola oil
Directions

Thinly slice zucchini (appro. 3/4 cm thick).

Place flour on a plate.

Beat eggs and salt together in bowl (egg wash).

Heat frying pan to medium-hi heat with oil.

Coat zucchini slices with flour, shaking excess off.

Dip flour coated slices into egg wash and place into hot pan.

Cook on each side until golden brown.

Place on paper towel to absorb excess oil.
