Bechamel

Ingredients

  • 4 cups hot milk
  • 6 tablespoons flour
  • 1/2 cup butter
  • 2 beaten eggs
  • salt and pepper
  • cinnamon (pastichio)
  • nutmeg (moussaka)

Directions

  1. Beat the eggs and set aside.

  2. Warm the milk in a separate pot.

  3. In a larger pot, melt the butter and add the flour stirring constantly until smooth.
  4. Add salt and pepper and stir until thickened

  5. Add spice ( 1/2 teaspoon cinnamon for pastichio, a dush of nutmeg for moussaka).
