Chicken Jambalaya

Original recipe called for one chicken breast and one pound andouille, but I do not eat pork, so I increased the amount of chicken.

Cook time: 30 minutes
Serves 6 people

Ingredients

  • 1 1/2 cups rice
  • 4 pieces boneless skinless chicken breast, diced
  • 2 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 tbsp. Worcestershire sauce
  • 3 stalks celery, chopped
  • 1/2 tsp. pepper
  • 2 cups chicken broth
  • 1 cup beef broth
  • 1/2 tsp. paprika
  • 1 bay leaf

Directions

  1. Combine rice, celery, onion, garlic, beef and chicken broth, bay leaf, pepper, paprika, and Worcestershire sauce in large skillet or Dutch oven.

  2. Bring to a boil. Reduce heat. Cover and simmer 20 minutes.

  3. Add chicken, cover and simmer until chicken is cooked through and liquid is absorbed, about 10 minutes.
