OATMEAL SCOTCHIES

(from New Life Bible Church Women’s recipe box)

These freeze well. Pop a couple in the micro and fresh baked cookies!

Ingredients

  • 1 1/4 cups Flour
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Cinnamon
  • 1/2 teaspoon Salt
  • 2 sticks Butter, softened
  • 3/4 cup Sugar
  • 3/4 cup packed Brown Sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla
  • 3 cups Oats
  • 11 oz pkg Butterscotch Chips

Directions

  1. Combine flour, baking soda, cinnamon & salt in small bowl.

  2. Beat butter, sugar, brown sugar, eggs & vanilla in large bowl.

  3. Gradually beat in flour mixture.

  4. Stir in oats & chips.

  5. Drop by rounded tablespoon onto ungreased cookie sheet.

  6. Bake at 375 for 7 to 8 minutes for chewy cookies or 9 to 10 minutes for crisp cookies.

  7. Cool on cookie sheet for 2 minutes; remove to wire racks to cool completely.
