Pumpkin Roll

Ingredients

  • 3 eggs
  • 1 c. sugar
  • 2/3 c. cooked pumpkin
  • 1 teaspoon lemon juice
  • 3/4 c. flour
  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 c. chopped nuts
  • Filling:
  • 1 c. powdered sugar
  • 1 8oz. cream cheese,softened
  • 1 teaspoon vanilla

Directions

  1. Beat eggs on high speed for 5 minutes. Gradually add sugar, stir in pumpkin and lemon juice.

  2. In seperate bowl sift together flour,baking powder, cinnamon,ginger,nutmeg and salt.

  3. Fold dry ingredients into pumpkin.

  4. Spread into a well greased jelly roll pan or cookie sheet. Top with chopped nuts.

  5. Bake @ 375 for 12-15 minutes

  6. While cake is baking, sprinkle a clean dish towel and sprinkle with powdered sugar.

  7. When cake is done, turn onto prepared dish towel and roll, towel and all.

  8. Cool completely.

  9. Make filling by combining all ingredients until smooth. Unroll cake, being careful, because it will crack. Spread filling on pumpkin roll and then roll up without the dish towel.

  10. Chill at least 1 hr
