Boston Restaurant Meat Sauce

Ingredients

  • 5 cloves garlic
  • 5 stalks celery
  • 1 carrot
  • 1 large onion
  • 3/4 tablespoon black pepper
  • 1/4 tablespoon crushed red pepper
  • 3/4 tablespoon oregano
  • A small handful of salt
  • 3 pounds ground beef
  • olive oil
  • 1/2 tablespoon baking soda
  • 1 gallon tomato paste
  • 1 1/2 gallon water

Directions

  1. In a food processor, process the vegetables.

  2. Saute the vegetable mixture in olive oil

  3. Add the ground beef and cook until brown

  4. Add the tomato paste and water

  5. Stir well

  6. Add the salt

  7. Simmer for at least 2 to 2 1/2 hours, stirring occasionally

  8. Add the baking soda and cook for an additional 10 minutes, stirring constantly.
