Stuffed Jalapenos

Stuffd Jalapenos may be made in advanced and frozen prior to frying

Serves 4 people

Ingredients

  • 20 90 count Jalapenos (canned)
  • 1 1/4C cream cheese
  • 3/4 C egg wash
  • 1 c corn meal

Directions

  1. Drain juice from Jalapenos

  2. Cut a slit lengthwise in the jalapeno and carefully remove the seeds, taking care not to tear the paper

  3. stuff each pepper eith approximately 1 tbsp cream cheese and reshape to close the slit

  4. Dip the stuffed jalapenos individually into the egg wash, then roll in the corn meal. repeat for each pepper so there is a double coating on each

  5. Heat oil in fryer to 350degrees

  6. Load 6 peppers at a time into the hot oil and fry for 3 minutes

  7. Drain excess oil after frying

  8. When all the peppers are done, place them on a glass dish and into the microwave. Heat 10 seconds or until cheese is completely melted

  9. Serve with sour cream for dipping
