Baked Penne with Zucchini

Ingredients

  • 2 cups (6 oz) whole wheat penne
  • 2 tsp EVOO
  • 2 medium zucchini, chopped
  • 3/4 lb frozen green beans
  • 1 can diced tomatoes
  • 1 cup pasta sauce
  • 1/2 cup water
  • 1/2 tsp Italian season
  • 1/4 tsp Kosher salt
  • 1/2 tsp black pepper
  • 1/2 cup mozzarella cheese
  • 2 T Parmesan cheese

Directions

  1. Preheat oven to 375 degrees.

  2. Prepare pasta per package directions but reduce cooking time by 2-3 minutes; drain.

  3. Heat oil in large non-stick skillet over medium-high heat.

  4. Add zucchini and green beans.

  5. Cover and cook, stirring occasionally, 8 minutes or until veggies are lightly browned.

  6. Stir in tomatoes, pasta sauce, water, seasoning, salt, and pepper.

  7. Cover and simmer 4 minutes.

  8. Transfer half of pasta into 2 quart baking dish coated with cooking spray.

  9. Top with half of veggie mixture.

  10. Add remaining pasta and veggies.

  11. Sprinkle with cheese.

  12. Cover and bake 30 minutes.

  13. Uncover and bake 10 minutes longer.
