Ingredients
- 1.5 kg leeks

- 1 handful rice
- 3 Tbsp olive oil
- 1 Tbsp tomato paste (for color)
- salt to taste
- 2 Tbsp sugar
- 1/2 cup water
Directions

-
Slice carrots into ½ inch coins.
-
Clean and wash the rice.
-
Add the tomato paste and olive oil to a pressure cooker and cook over low heat.

-
Add sugar, salt, rice and water.
-
Cook in pressure cooker on “2” for three minutes.
-
When you open the lid of the pressure cooker if it seems uncooked or watery cook it uncovered for a few more minutes to allow the water to be absorbed.

Let cool and serve with squeezed lemon.
