Lemon Merangue Pie

Makes an 8" pie or a 10" pie.

Ingredients
- 8" pie
- 1/2 C & 1 T flour
- 1 1/4 C sugar
- 1 3/4 C water
- 1 1/2 T butter
- 1/4 t salt
- 3 egg yolks
- 1/4 C lemon juice
- 2 T grated lemon rind
- 10" pie
- 3/4 c & 1 1/2 T flour
- 1 3/4 C sugar
- 2 1/2 C water
- 3 T butter
- 1/2 t salt
- 4 to 5 egg yolks
- 1/2 C lemon juice
- 3 T grated lemon rind
Directions

Mix flour, sugar, & salt. Stir in water, add butter. Cook till thick. Separate eggs, beat yolks, and add to pie filling. Cook 3 to 5 minutes. Add lemon juice and rind. Pour into shell
