Ingredients
- • 1 lb. 10 oz carrots, any variety and color, washed and scrubbed.
- • 1-2 Tablespoons extra virgin olive oil
- • 1-2 Tablespoons flavored vinegar (balsamic, herb, red wine, etc.) or O.J.
- • 3 cloves garlic
- • 2 teaspoons fresh thyme
- • Salt and pepper to taste

Preheat oven to 400°F.

Toss all ingredients together and place in roasting tray.

Cover with foil; cook for 30-40 minutes until tender. Remove foil and cook another 10 minutes or until lightly caramelized.
