The Best Whole Baked Carrots

Ingredients

  • • 1 lb. 10 oz carrots, any variety and color, washed and scrubbed.
  • • 1-2 Tablespoons extra virgin olive oil
  • • 1-2 Tablespoons flavored vinegar (balsamic, herb, red wine, etc.) or O.J.
  • • 3 cloves garlic
  • • 2 teaspoons fresh thyme
  • • Salt and pepper to taste

Directions

  1. Preheat oven to 400°F.

  2. Toss all ingredients together and place in roasting tray.

  3. Cover with foil; cook for 30-40 minutes until tender. Remove foil and cook another 10 minutes or until lightly caramelized.
