Whole Grain Pancakes

Pancake mix: Makes 4 ½ cups mix. (1 cup mix makes nine 4-inch pancakes).

Ingredients
- • 2 cups whole wheat flour
- • 1 cup corn meal
- • 1 cup oat flour**
- • 3 Tablespoons sugar
- • 4 Tablespoons baking powder
- • 2 teaspoon salt
- Liquid ingredients:
- • 1 egg
- • 3/4 cup milk
- • 2 Tablespoons canola oil
- Optional add-ins (add with liquid ingredients):
- • 1/2 cup blueberries, fresh or frozen (thawed and drained)
- • 1/2 cup nuts, chopped
- • 1/2 cup pumpkin, squash or sweet potato, mashed
- • 1 apple, chopped small
- • 1 banana, sliced

Blend ingredients together. Store mix in an air-tight container.

**Make oat flour by pulsing quick or old-fashioned oatmeal in the blender for a couple of minutes.

To prepare pancakes:

Heat the griddle. Add the liquid ingredients and mix until the dry ingredients are just moistened (for thinner pancakes add an extra ¼ cup milk). Grease heated griddle, if necessary.

Pour ¼ cup of batter onto griddle. Cook pancakes until puffed and dry around edges. Turn and cook until other side is golden brown.
