Pumpkin Spice Pancakes

(Yield: 14 to 16 (4") pancakes)

Ingredients

  • • 2 cups pancake mix
  • • 1 1/3 cup milk
  • • 1/2 cup canned pumpkin
  • • 1/4 cup oil
  • • 1 Tablespoon sugar
  • • 1 teaspoon pumpkin pie spice
  • • 2 eggs

Directions

  1. Heat skillet or griddle to 375°F. Grease lightly with oil.

  2. In medium bowl, combine all ingredients; stir just until all ingredients are moistened.

  3. For each pancake, pour 1/4 cup batter onto hot skillet. Cook 1 to 1 1/2 minutes, turning when edges look cooked and bubbles begin to break on surface. Continue cooking until golden brown.
