Blueberry Granola Bars

Ingredients

  • • 3 1/2 cups rolled oats
  • • 1/3 cup vegetable oil
  • • 3/4 cup brown sugar, light
  • • 1/3 cup eggs
  • • 1 teaspoon vanilla extract
  • • 1/2 teaspoon ground cinnamon
  • • 1/4 teaspoon salt
  • • 3/4 cup whole wheat flour
  • • 1 1/2 cups frozen blueberries (not thawed)

Directions

  1. Combine the oats and 3 Tablespoons of the vegetable oil and spread on a rimmed baking sheet. Bake at 350°F for 12-15 minutes, stirring occasionally, until golden, then let cool.

  2. Beat together the brown sugar, remaining oil, eggs vanilla, cinnamon and salt. Beat in the flour until smooth. Stir in the cooled oatmeal mixture until blended, them immediately stir in the frozen blueberries.

  3. Pat the dough into a 12X20X2 ½-inch pan lined with aluminum foil, coated with a non-stick cooking spray, pressing very firmly.

  4. Bake until lightly browned in a conventional oven at 350°F for 35-40 minutes. Cool and cut into 6X8 pieces.
