Ingredients
- • 3/4 cup butter
- • 1/4 cup applesauce
- • 3 1/3 cups brown sugar
- • 3 1/2 cups crushed pineapple (in juice)
- • 3/4 teaspoon vanilla extract
- • 1 1/2 teaspoons maple flavoring
- • 5 cups flour
- • 1 cup + 2 Tablespoons dry milk (nonfat)
- • 1 Tablespoon ground cinnamon
- • 1 Tablespoon baking soda
- • 1/2 teaspoon salt
- • 5 cups oatmeal
- • 3 cups raisins
- • 3 cups walnuts
Directions

Preheat oven to 350°F. Line a sheet pan with parchment paper.

Cream the butter, applesauce and sugar until light and fluffy, using the paddle attachment of an electric mixer.

Add the crushed pineapple, vanilla and maple syrup/flavoring and beat on low speed.

Combine the flour, dry milk, cinnamon, baking soda and salt. Add the creamed mixture. Add the oats, raisins and stir these in, on low speed, until combined.

Using a ¼ cup scoop to portion, drop the cookie dough onto a baking pan. Flatten slightly.

Bake for 12-15 minutes. Allow to cool for 5 minutes before removing from tray.
