Cumin Brown Rice Salad

Ingredients

  • • 3 cups cooked brown rice
  • • 1 small sweet onion
  • • 1 1/2 Tablespoons olive oil
  • • 1/2 cup assorted dried fruit (Golden raisins, raisins, dried apricots, and craisins are good)
  • • 1-2 teaspoon ground cumin, to taste
  • • Salt to taste
  • • 1/3 – 1/2 cup cashews (or any nut)
  • • Fresh mint, chopped (for garnish)

Directions

  1. Sauté onion in oil until soft. Stir in brown rice, dried fruit and cumin, Cover and reduce heat; continue to simmer for 5 minutes. Chill at least 24 hours, preferably 48 hours.

  2. Add cashews and mint just before serving.
