Ingredients
- • 3 cups cooked brown rice
- • 1 small sweet onion
- • 1 1/2 Tablespoons olive oil
- • 1/2 cup assorted dried fruit (Golden raisins, raisins, dried apricots, and craisins are good)
- • 1-2 teaspoon ground cumin, to taste
- • Salt to taste
- • 1/3 – 1/2 cup cashews (or any nut)
- • Fresh mint, chopped (for garnish)
Directions

Sauté onion in oil until soft. Stir in brown rice, dried fruit and cumin, Cover and reduce heat; continue to simmer for 5 minutes. Chill at least 24 hours, preferably 48 hours.

Add cashews and mint just before serving.
