Ingredients
- • 8-10 cups torn romaine
- • 4-5 roma tomatoes
- • 2 cans corn, drained
- • 1 can black beans, rinsed and drained
- • 1/2 cup thinly sliced green onions
- • 1-2 avocados, peeled and diced
- DRESSING:
- • 1 1/2 cups mayonnaise
- • 1/2 cup salsa
- • 2 Tablespoons lime juice
- • 1/2 teaspoon ground cumin
- • 1/2 teaspoon chili powder
- • 1 1/2 cups minced fresh cilantro
Directions

Place the romaine in a large salad bowl. Combine corn, beans, and onions; spoon over romaine. Chop up tomatoes and mix with chopped avocados; spoon over corn layer.

For dressing, in a bowl, combine all ingredients and spoon over tomato, avocado layer, spreading to the sides of the bowl. Garnish with olives, tomatoes, and cheese if desired.
