Ingredients
- • 2 Tablespoons Dijon mustard
- • 2 Tablespoons reduced-fat mayonnaise
- • 1/2 cup chopped red onions
- • 1/2 cup seeded, chopped red bell peppers
- • 1/2 cup seeded, chopped yellow bell peppers
- • 1/2 cup chopped celery
- • 1 12-oz. can solid white tuna packed in water, drained and flaked
- • Pinch freshly ground black pepper
- • 4 6-inch whole wheat pita pockets
- • 1/2 cup shredded arugula or spinach
- • 1/2 cup sliced mushrooms, about 1 1/2 oz.
Directions

Whisk the mustard and mayonnaise in a medium bowl. Add the onions, bell peppers, celery, tuna, and black pepper. Stir the tuna salad until well mixed, set aside.

Cut the pitas in half crosswise. Divide the arugula, mushrooms, and tuna salad among the pita halves.
