- • 1 1/2 cups chicken broth
- • 1/2 cup chopped onion
- • 2 cups cut broccoli
- • 1/2 Tablespoon butter
- • 2 Tablespoons flour
- • 1/2 teaspoon salt
- • 1 cup milk
- • 1/2 cup grated cheese, if desired

In sauce pan, combine chicken broth, chopped onion, and broccoli. Bring mixture to boiling. Reduce heat; cover and simmer 10 minutes.

In another saucepan, melt the butter. Blend in flour and salt. Add the milk and cook, stirring constantly until mixture is thickened and bubbly.

Stir in the vegetable mixture. Cook and stir until soup is heated through.
