- 1 1/4 cup(s) all-purpose flour
- 2 Tbsp sugar
- 2 tsp baking powder
- 1/2 tsp ground cinnamon
- 1/4 tsp baking soda
- 1/4 tsp table salt
- 1 cup(s) buttermilk, low-fat (1%)
- 1/2 cup(s) unsweetened applesauce, cinnamon-flavor
- 1 Tbsp vegetable oil
- 1 tsp vanilla extract
- 1 large egg(s), lightly beaten
- 1/2 cup(s) apple(s), diced (Braeburn variety)
- 1 spray(s) cooking spray

Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next five ingredients in a large bowl; stir with a whisk. Combine buttermilk and next four ingredients in a small bowl; stir with a whisk until smooth. Add buttermilk mixture to flour mixture; stir until smooth. Stir in apple.

Spoon about 1⁄4 cup batter onto a hot nonstick griddle or nonstick skillet coated with cooking spray. Turn pancakes when tops are covered with bubbles and edges look cooked. Yield: 10 servings (serving size: 1 pancake).
