Ingredients
- 1 bunch green onions (or 1 onion, chopped)
- 4 cups chopped vegetables (corn, carrots, broccoli, zukes, greens, cauliflower, etc.)
- 1/2 teaspoon salt
- Freshly ground black pepper to taste
- 1 teaspoon-1Tablespoon herbs and spices (chili powder, pesto, paprika, crushed red pepper, etc.)
- 4 eggs
- 2 1/2 cups milk
- 5 cups cubed bread (crusts included)
- 1 cup grated cheese

Preheat oven to375°F.

Sauté onions until tender then add other vegetables and seasonings. Mix in a large bowl eggs, milk, bread, and grated cheese. Mix all ingredients. Pour into greased 9X13-inch pan. Top with sliced tomatoes, if desired. Sprinkle with more herbs.

Bake until puffed and browned, about 45 minutes.

**Variations: Use your imagination with the spices and cheese. You can try mozzarella cheese with spices such as rosemary, basil and cilantro for a more Italian style dish. Use pepper jack cheese for a spicier dish. Adding grilled or boiled chicken into this recipe would be a great way to add more meat into the dish. Substituting the vegetables with sweet potatoes and using spices such as nutmeg and cinnamon would make a great dish also. To make things easy, use frozen veggies-just thaw fist before sautéing! The possibilities are endless!
