Ingredients
- 2 cups whole wheat flour
- 2 cups all-purpose flour
- 1/2 cups oats
- 1 Tablespoon + 1 1/2 teaspoons active dry yeast
- 1/4 teaspoon salt
- 2 teaspoons honey
- 1 1/2 cups warm water
- 1 cup + 2 Tablespoons prepared pizza sauce
- 2 teaspoons minced garlic
- 1/4 cup fresh basil leaves
- 1 1/2 cups spinach leaves
- 1 cup + 2 Tablespoons broccoli florets
- 1/2 cup + 1 Tablespoon carrots, grated
- 1 cup + 2 Tablespoons green peppers, diced
- 1 cup + 2 Tablespoons tomatoes, diced
- 2 1/4 cups mozzarella cheese, part-skim
Directions

To prepare the pizza dough: mix 1 cup each of the white and whole wheat flour, oats, yeast and salt. Set aside. Heat water to 125°F, then add the honey.

Gradually add the water to the dry mixture. Mix for 2 minutes. Add the remaining flour, mixing well ager each addition.

Knead the dough for 10 minutes. Spray with a baking spray; cover. Let the dough rise in a warm place until doubled. Punch down.

Divide the dough into equal parts. Roll and place in a 7-inch pizza pans. Cover. Let the dough rise in a warm place for about 45 minutes.

Mix the garlic and basil (trimmed and chopped) into the prepared pizza sauce. Top each dough round with 2 Tablespoons each of the pizza sauce, spinach leaves (stems trimmed), broccoli, carrots, green peppers, tomatoes, and cheese.

Bake at 375°F until cheese melts.
