Smothered Chicken

Ingredients

  • 4 chicken breasts
  • Montreal steak seasoning
  • 1 Tablespoon vegetable oil
  • 1 small carton quartered mushrooms
  • 1/2 -1 lb. bacon
  • 4 slices Colby jack cheese
  • 1/2 cup green onions
  • 4 Tablespoons barbeque sauce
  • HONEY MUSTARD SAUCE:
  • 1 cup light mayonnaise
  • 1 cup Dijon mustard
  • 1/4-1/2 cup honey
  • 3 Tablespoons lime juice
  • 1/2 teaspoon ginger powder-optional

Directions

  1. Mix all honey mustard sauce ingredients together until smooth.

  2. Pound chicken until it is ½” thick. Brown in oil for about 4 minutes. Sauté mushrooms and bacon together.

  3. Combine barbeque sauce, mushrooms, bacon and cheese; let simmer for 15 minutes.

  4. Add honey mustard sauce to top of chicken with green onions before serving.
