Ingredients
- 1 yellow squash
- 1 zucchini squash
- 1 cup carrots, chopped
- 8 oz. frozen grilled chicken strips (or 2-3 boneless, skinless chicken breasts)
- tortillas
- cheese, grated
- Toppings such as: salsa, ranch, sour cream, etc.
Directions

Shred the two squash (you can use a cheese grater to do this). Put into a skillet, add the chopped carrots. Cook on medium heat until carrots become tender-crisp (about 10-15 minutes).

Meanwhile, put water into small saucepan and add chicken. Cook on medium-high heat. Boil until chicken is thawed and heated all the way through. Drain and add to the veggie mix. Stir together.

Put mixture into tortillas. Add cheese and other toppings as desired. Fold up tortilla and enjoy.
