Ingredients
- 1 green or red pepper, diced
- 1/2 red onion, diced
- 1 Tablespoon olive oil
- 1 cup black beans, canned rinsed and drained
- 1/2 cup pepper jack cheese, grated
- 1/2 cup cheddar cheese, grated
- 4 8” whole wheat tortillas
Directions

Heat oil on medium high heat on non-stick skillet; add peppers and onions and sauté. Add beans and heat until warm.

Evenly sprinkle a quarter of the cheddar cheese over half of each tortilla; spoon ½ cup of the vegetable and bean mixture over the cheese and then sprinkle a ¼ of the pepper jack cheese on top. Fold the tortilla over the top.

Place in a heated skillet and cook on medium heat for a couple of minutes on each side until the tortilla is golden brown and the cheese is melted. Take off the heat and let sit for a couple minutes to cool. Cut into quarters and serve with salsa, guacamole, or light sour cream.
