Veggie Nachos

(Yield: 10 servings; Serving size: 6 nachos)

Ingredients

  • 2 large tomatoes
  • 1 large green pepper
  • 1 bunch of green onions (about 9)
  • 1 can of black olives, sliced
  • Garlic powder to taste
  • Fat free zesty Italian dressing
  • 1-4 oz sharp cheddar cheese, grated
  • 60 round tortilla chips

Directions

  1. Preheat oven to 400°F.

  2. Dice ingredients and add dressing to taste. Line cookie sheet with aluminum foil and place a single layer of chips across the bottom. Top each chip with cheese. Place 1 Tablespoon of the vegetable mixture on top of the cheese and bake until cheese is melted. Serve immediately.
