Baked Rice Pudding

Ingredients

  • 2 cups milk
  • 1/2 cup rice
  • 1/2 cup raisins
  • 1/4 cup peanut butter
  • 1/2 teaspoon salt
  • 3 beaten eggs
  • 2 cups milk
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • Cinnamon and milk

Directions

  1. Boil 2 cups milk, uncooked rice, and raisins. Reduce the heat. Cover and cook over very low heat for 15 minutes or until rice is tender. Remove from heat, stir in peanut butter.

  2. In a mixing bowl stir eggs, 2 cups on milk, sugar, sugar, vanilla and salt. Gradually stir rice mixture into egg mixture. Pour in to 10X6X2 pan.

  3. Bake at 325°F for 30 minutes. Stir well. Sprinkle with cinnamon. Bake for 15-20 minutes, or until a knife inserted comes out clean. Serve warm or chilled with milk.
