Ingredients
- 1 cup water
- 1 square butter
- 1 cup flour
- 4 eggs
- FILLING:
- 1 small pkg. instant pudding
- 1 envelope dream whip
- VANILLA CREAM PUFF FILLING:
- • 3/4 cup sugar
- • 3 eggs, beaten
- • 6 Tablespoons cornstarch
- • 1 Tablespoon margarine
- • 1/2 teaspoon salt
- • 2 teaspoons vanilla extract
- • 3 cups milk

Bring water and butter to a boil.

Turn off heat and quickly add flour. Mix vigorously with wooden spoon until mixture leaves side of pan. Remove from heat.

Beat all eggs until it gums up on beater. Drop by spoonfuls on greased cookie sheet. Bake at 400ºF until golden brown (30 minutes).

FILLING: put pudding and dream whip in mixing bowl and add 1⅓ cup milk. Beat until stiff.

Dip tops in powdered sugar. Fill puffs with one of the two filling recipes below.

VANILLA CREAM PUFF FILLING: A. Mix sugar, cornstarch and salt in saucepan. Stir in milk. Cook until thick, stirring constantly over a medium heat.

B. Stir a small amount of hot mixture into eggs; stir eggs into hot mixture. Cook for 5 minutes stirring constantly on medium-low heat. Add margarine.

C. Sprinkle a pinch of sugar over the top to keep skin from forming as mixture cools. Chill in refrigerator.

D. Fold in vanilla. Fill puffs.
