Greek Chestnut stuffing

Ingredients

  • 1/2 stick butter
  • 3 onions, chopped
  • 2 cups chopped celery
  • 1 pound ground beef
  • 1 1/2 cups rice
  • 1 tablespoon tomato paste, dissolved in water
  • pepper
  • 1 pound of prepared chestnuts (boiled, cleaned and chopped)
  • pinch of cinnamon
  • pinch of sage
  • stuffing mix, soaked in 2 cups of chicken broth

Directions

  1. Soak the stuffing mix in the broth, squeezing out excess water

  2. Saute the onions and celery in butter

  3. Add the ground beef and brown well

  4. Add the rice and reduce the heat to low

  5. Dissolve the tomato paste in the water and add to pot

  6. Simmer over low heat for about 10 minutes

  7. Add the pepper

  8. Add the chestnuts

  9. Add the spices

  10. Toss in the stuffing mix

  11. Preheat oven to 325

  12. Cover and bake in casserole for about 45 minutes, basting occasionally with turkey juices (or stuff the turkey)
