Ingredients
- 1 pound chicken breast cut into strips
- 2 tablespoons oil
- 1 can cream of chicken soup
- 1/2 can evaporated milk
- 2 tablespoons mustard
- 1/2 cup shredded cheddar or Swiss cheese
- 1 1/2 cups frozen broccoli, thawed
- 2 tablespoons chopped pimentos
Directions

Heat oil in frying pan.

Fry chicken in hot oil, until lightly browned, stirring often

Stir in soup, mustard, milk and cheese

Add broccoli and pimento

Bring to a boil

Reduce and simmer for 2 minutes

Serve over rice
