Chicken En Croute

Ingredients

  • 6 chicken breast halves
  • 1 1/2 cup chicken broth
  • 1/2 cup sherry wine
  • 6 slices, thinly sliced ham
  • Dijon mustard
  • 1 teaspoon rosemary
  • 6 slices Swiss cheese
  • Frozen puff pastry sheets

Directions

  1. Preheat oven to 400

  2. Combine chicken broth and sherry wine in a frying pan

  3. Add chicken breasts and poach until thoroughly cooked

  4. Wrap each chicken breast in a slice of ham and top with mustard and rosemary

  5. Wrap with cheese slices

  6. On a floured board, cut out circles of puff pastry ( big enough to completely seal each breast)

  7. Wet the edge with water, crimp and seal

  8. Bake on ungreased cookie sheet for 20 minutes or until golden brown.
