Chewy Oatmeal Chocolate Chip Cookies

Variations: For wheat –free cookies, substitute 1 cup organic barley flour for whole wheat pastry flour. For lower fat cookies, use 3 tbsp organic canola oil and 3 tbsp organic applesauce. Substitute carob chips for chocolate chips, if desired.
Ingredients
- 1 cup rolled oats
- 3/4 cup chocolate chips (or mix and match different types of chips, dried fruit and nuts – total 3/4 cup)
- 1 cup whole wheat pastry flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp sea salt
- 1/4 cup organic granulated sugar
- 6 tbsp organic canola oil
- 1/4 cup organic agave
- 1/4 cup water
- 1/2 tsp vanilla
Directions

Preheat oven to 325

Place first 6 ingredients in large mixing bowl.

Place liquid ingredients in a small bowl and whisk to combine.

Pour the wet ingredients into the dry ingredients and mix with a fork until combined.

Drop 1 tbsp portions of batter onto a parchment-lined cookie sheet.

Bake 8-10 minutes until lightly golden around the edges. Remove and set aside for 2 minutes.

Transfer cookies to wire rack and allow to cool. Store in covered container.
