Quinoa Couscous

Ingredients

  • •1 cup(s) of quinoa

  • •2 cup(s) of water

  • •1/2 cup(s) of fresh basil
  • •1/4 cup(s) of fresh parsley
  • •1/2 cup(s) of raisins
  • •1/2 cup(s) of chickpeas, drained
  • •1/2 cup(s) of toasted almonds
  • •1 tbsp. of olive oil

Directions

  1. In a saucepan, pour in 1 cup of quinoa and 2 cups of water.

  2. Bring to a boil.

  3. Reduce to a simmer, cover and cook until all the water is absorbed (about 10-15 minutes).


  4. Remove and put in a bowl.


  5. Chop the basil and parsley, and mix into the quinoa.


  6. Toss in the raisins, chickpeas, almonds, and olive oil.


  7. Salt and pepper to taste.
