Ingredients
- •1 cup(s) of quinoa
- •2 cup(s) of water
- •1/2 cup(s) of fresh basil
- •1/4 cup(s) of fresh parsley
- •1/2 cup(s) of raisins
- •1/2 cup(s) of chickpeas, drained
- •1/2 cup(s) of toasted almonds
- •1 tbsp. of olive oil
Directions

In a saucepan, pour in 1 cup of quinoa and 2 cups of water.

Bring to a boil.

Reduce to a simmer, cover and cook until all the water is absorbed (about 10-15 minutes).

Remove and put in a bowl.

Chop the basil and parsley, and mix into the quinoa.

Toss in the raisins, chickpeas, almonds, and olive oil.

Salt and pepper to taste.
