Ingredients
- 1-1/2 cups all-purpose flour
- 1-1/4 cups sugar
- 2 packages (3.4 ounces each) instant
- vanilla pudding mix
- 1-1/4 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 5 eggs
- 2 cups mashed ripe bananas,
- (4-5 medium)
- 1 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup chopped nuts, optional
Directions

In a large bowl, combine the first six ingredients. In a mixing bowl, beat the eggs, banana, oil and vanilla. Stir into dry ingredients just until moistened. Stir in nuts, if desired.

Transfer to two greased 8-in. × 4-in. × 2-in. loaf pans. Bake at 350 degrees for 55-65 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks. May use 6 mini loaf pans and bake 40-45 minutes.
