Conroy’s Chicken Kelly

Ingredients

  • 2 eggs
  • 1/2 cup skim milk
  • 1/2 cup bread crumbs
  • 1 tablespoon olive oil
  • 1 Box Uncle Ben's wild rice
  • 1 cup chicken broth
  • 1/2 cup fresh sliced mushrooms
  • 5 slices Munster cheese
  • 1 1/2 pounds chicken breast

Directions

  1. Whisk together eggs and milk

  2. Cut chicken into strips and soak in milk mixture for 1 hour

  3. Dredge strips in bread crumbs and sear over high heat in skillet in the olive oil

  4. Prepare the rice as directed and place on bottom of 9 × 13 pan

  5. Arrange chicken on top of rice

  6. Add broth, mushrooms and top with cheese

  7. Bake covered in 350 preheated oven for 30 minutes

  8. Uncover and bake for an additional 10 minutes or until brown
