Coquilles St. Jacques

Ingredients

  • 1/2 cup fresh bread crumbs
  • 5 tablespoons butter
  • 1 1/2 cups shredded Gruyere cheese
  • 1 cup mayonnaise
  • 1/4 cup dry white wine
  • 1 tablespoon chopped parsley
  • 1 pound sliced mushrooms
  • 1/2 cup chopped onion
  • 1 pound sea scallops

Directions

  1. Toss breadcrumbs with 1 tablespoon melted butter and set aside

  2. Stir together next 4 ingredients and set aside

  3. In medium skillet, over medium heat cook scallops until opaque

  4. Remove and drain well

  5. Cook mushrooms in and onion in 2 tablespoon butter for 3 minutes

  6. Add to cheese mixture along with scallops

  7. Sprinkle with remaining bread crumbs

  8. Place in broiler for 2-4 minutes or until brown
