Crab Cakes

Ingredients

  • 1 cup oil
  • 4 large eggs
  • 1 cup bread crumbs
  • 1 cup chopped scallion
  • 1 cup chopped red pepper
  • 2 tablespoons mayonnaise
  • 3/4 tablespoons orange zest
  • 1/2 teaspoon each salt and pepper
  • 1 pound crab meat
  • 3/4 cup flour

Directions

  1. In a bowl, mix 3 eggs, scallion, pepper, mayonnaise, salt and pepper

  2. Add crab

  3. Mix in 1 cup bread crumbs

  4. Shape by 1/4 cup fulls

  5. Coat with flour and dip in beaten egg

  6. Place on baking sheet and chill for 1/2 hour

  7. In a large skillet, fry in hot oil, 3 minutes per side
