Categories: BREADS
Ingredients
- 2 cups Flour
- 3/4 cup Sugar
- 4 teaspoons Baking Powder
- 1/2 teaspoon Salt
- 1/2 cup Candied Pineapple
- 1/2 cup Candied Cherries
- 1/2 to 1 cup Walnuts, optional
- 2 Eggs
- 1 cup Milk
- 1/4 cup Butter (melted) or Oil
Directions
-
Note: Using 1/2 cup each of the Candied Pineapple and Candied Cherries will make it more of a bread with “fruit highlights.” I prefer to use more of the candied fruit so that it is less bread and more fruity.
-
In large bowl measure in flour, sugar, baking powder, salt, candied pineapple, and candied cherries. Stir thoroughly. Make a well in center.
-
In small bowl beat eggs until frothy. Mix in milk and melted butter (or oil). Pour into well. Stir just to moisten.
-
Pour into greased 9×5×3 inch loaf pan.
-
Bake at 350 for about 1 hour. Let cool in pan on a wire rack 10 minutes, then remove.
