Sleepy Morning Oatmeal

(from New Life Bible Church Women’s recipe box)

If you are not able to eat all of this in a couple of days, cut in serving size pieces, place in plastic bag and freeze. Either thaw or microwave when ready to use.

Ingredients

  • 1/2 c melted butter
  • 2 eggs, beaten
  • 3/4 c brown sugar
  • 3 c regular oatmeal...don't use instant
  • 2 t baking powder
  • 1 t salt
  • Mix together.
  • Make a well in center and add:
  • 2 c milk
  • 1 t ground cinnamon
  • 1/4 t vanilla (I add more)
  • 1/2c raisins or dried cranberries( you could use fresh apples, dates or any other dried fruit.)
  • 1/2 c coconut
  • 1/2 c walnuts, chopped coarsely
  • Blend well. Pour into greased 9 x 13 pan
  • bake at 350 degrees for about half and hour.
