Sleepy Morning Oatmeal

If you are not able to eat all of this in a couple of days, cut in serving size pieces, place in plastic bag and freeze. Either thaw or microwave when ready to use.

Ingredients
- 1/2 c melted butter
- 2 eggs, beaten
- 3/4 c brown sugar
- 3 c regular oatmeal...don't use instant
- 2 t baking powder
- 1 t salt
- Mix together.
- Make a well in center and add:
- 2 c milk
- 1 t ground cinnamon
- 1/4 t vanilla (I add more)
- 1/2c raisins or dried cranberries( you could use fresh apples, dates or any other dried fruit.)
- 1/2 c coconut
- 1/2 c walnuts, chopped coarsely
- Blend well. Pour into greased 9 x 13 pan
- bake at 350 degrees for about half and hour.
